Recipe: Vegan Hemp Flour Waffles

This weekend I made waffles instead of pancakes because I didn’t want to wash the frying pan.

I subbed about 1/4 of the flour with hemp flour for a boost in protein, fiber, and other nutrients. It has a subtle nutty flavour and some added texture. These waffles are nice and dense, perfect to start your morning. They also freezer well.


Hemp Flour Waffles

Prep time: 5 minutes
Cook time: 35 minutes
Servings: 6
Nutritional information, per waffle: 325 calories (13.1 grams fat, 43 grams carb, 12 grams protein)

Ingredients:

1 1/4 cup unsweetened soy milk (or other milk)
1 tsp apple cider vinegar
1/4 cup vegetable oil (or other cooking oil)
1/4 cup maple syrup
1/2 cup oats
1/2 cup hemp flour (you can also replace with regular flour)
1 1/4 cup whole wheat flour
1 1/2 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract

Directions:

  1. Whisk the vinegar and milk in a medium bowl until frothy and set aside.

  2. Add all dry ingredients together in a large bowl and mix.

  3. Mix the rest of the wet ingredients into the milk/vinegar.

  4. Add wet ingredients to dry and mix until combined.

  5. Preheat waffle iron, then coat with non-stick spray or use a silicone basting brush.

  6. Add about 1/2 cup to your waffle iron and cook per the devices instructions. I cooked mine about 6-7 minutes (until there was no steam coming out of the iron). Don’t open your iron too early or your waffles will split apart!

  7. Serve with maple syrup or other topping of choice.
