New Year's Eve Vegan Feast (+ Vegan Apple Pie Recipe)

Rang in the new year with a vegan FEAST!

While my husband took over the kitchen making an incredible dinner, I found a little corner to work on my favourite homemade dessert: apple pie. The recipe was frankensteined together from a few sources (the crisco wrapper and a couple taste.co recipes for the crust, and Minimalist Baker and The Joy of Cooking for the filling), which I’ve shared below. This is only the second or third pie I’ve made in my life and I was very pleased with the outcome (despite some swearing as I troubleshooted the crust).

My husband’s masterpiece was a faux-beef roast from Gaz Oakley’s Vegan Christmas cookbook, maple balsamic carrots, and simple roasted potatoes. I can’t wait to eat the leftovers for dinner again tonight!

Apple Pie

Prep time: 1 hour 20 minutes
Cook time: 1 hour 15 minutes
Servings: 8 slices
Nutritional information, per slice: 540 calories (24.8 grams fat, 75.7 grams carb, 4.5 grams protein)

Pie Crust, Ingredients:

2.5 cups all-purpose flour
1 tsp salt
1 cup vegetable shortening (I used Crisco) or vegan butter
0.5 cups ice cold water

Pie Crust, Directions:

  1. Preheat oven to 350F.

  2. Mix the flour and salt together.

  3. Add in cubes of cold shortening, gently mixing to coat with flour as you go.

  4. Cut the shortening into the flour using two knives until the lumps of shortening are about pea sized.

  5. Slowly add ice cold water until a ball of dough forms.

  6. Split the dough ball into 2 pieces, then refrigerate for 1 hour (use this time to prepare the filling).

  7. Dust your counter and rolling pin with flour, then roll the dough to about 1/8 inch thick and lay across your pie plate.

  8. Bake 5 minutes at 350F before adding your filling and top crust.

Pie Filling, Ingredients:

8-9 small apples (I used Macintosh)
0.5 cups cane sugar
0.25 cups packed brown sugar
2 tbsp lemon juice
2 tsp cinnamon
0.75 tsp ground ginger
0.25 tsp nutmeg
3 tbsp cornstarch
0.25 cups water

Pie Filling, Directions:

  1. Peel, core, and slice apples: small slices if you like your pie filling more applesauce like, or bigger slices if you like it more firm.

  2. Mix all ingredients together in a large bowl until apples are well coated.

  3. Pour filling into the bottom crust and cover with top crust.

  4. Cut vents into the top crust if you’re using a solid piece (or get extra fancy with a lattice top!).

  5. Bake at 350F for 60 to 75 minutes, until the crust is golden brown.
